Seems over compilicated. A user can just diff the old and new values:

cat /sys/kernel/debug/mmc0/err_stats > /tmp/old-stats
...later...
cat /sys/kernel/debug/mmc0/err_stats > /tmp/new-stats
diff /tmp/old-stats /tmp/new-stats
mv /tmp/new-stats /tmp/old-stats

I suggest just outputting the stats
